Spring Varieties Ready, More in 2-3 Weeks (As of 3/10/23)
Spring veggies such as tomatoes and cucumbers are ready, with additional varieties coming in the next few weeks. Basils, 8 varieties, will be available in 2-3 weeks, peppers in 2-3, squash in 1-2, eggplants in 2-3. As it begins to warm up, more varieties will be ready.

Cauliflower
Snow Crown Cauliflower grows best in cooler weather. It may produce one head or several small heads over several months; the leaves are also edible. They are hearty, similar to a collard green, and may be sauteed or even baked. Start in late summer to produce in fall.

Cheddar Cauliflower
Brilliant orange cauliflower. Cauliflowers are now available in purple, green, white, and orange.
San Marzano II
A delicious Roma tomato, perfect for homemade tomato sauce. Highly productive.
Brandywine Tomato
Good size, great flavor. This round tomato will vine rather than bush. Produces relatively early.
Sashimi Cucumber - Produces Indoors
Great cucumber, will produce both indoors and outdoors. Early production, and will grow up to 1' long.
Spineless Perfection Zucchini Squash
Very tender when picked early, capable of reaching over a foot in length. Blossoms may be stuffed. Excellent for baked chips, salads, and zucchini bread.
Monterey Strawberry

Fast-paced growth, thick stalks, densely packed. Terrific for leaf harvest, the large leaves and stalks have unique flavor. Add to salad or stir fry.
Swiss Chard Bright Lights Rainbow Chard
Slightly bitter leaves, savory stems, always gorgeous. Terrific for cooking or eating raw. Use in salads, stir fry, wraps, etc.
Italian Basil

Miscellaneous Tomatoes
At the end/beginning of the season, the remaining tomatoes will be organized into a large group, a mix of all tomatoes. These will be large seedlings, usually over 6" tall, and sturdy. They will be a mix of cherry, roma, and beefsteak tomatoes.

Black Cherry
Black Cherry tomato - flavor similar to an heirloom, sweet. 2 months or less to fruit.
Grand Marshall Beefsteak Tomato
A new determinate tomato! Excellent flavor, 10-14 ounce tomatoes, which produces even in very warm weather.
Spring/Summer Veggies
Eggplant - Nadia
Small-medium sized fruit on a plant which produces abundantly. Gorgeous purple flowers and fruits. A small bushing plant, only about 2-3 feet tall.
Cucumber - Nokya (Japanese Cucumber)
Replaces Tasty Jade, which is discontinued. An ideal cucumber, perfect for snacking. Delicious and vibrant. Vines may grow upwards of 5'. Cannot be recommended highly enough!
Jalapeno - Jedi
Very large fruits on tall plants. Great heat and flavor, perfect to add spice to any number of dishes.
Lemon Cucumber
Tiny, yellow, about the the size of a lemon, wonderful either raw or pickled. Definitely worth a try!
Spineless Perfection Zucchini Squash
Very tender when picked early, capable of reaching over a foot in length. Blossoms may be stuffed. Excellent for baked chips, salads, and zucchini bread.
Cucumber - Striped Armenian
Striped Armenian
A personal favorite. Different than traditional cucumbers in shape, yet has outstanding flavor which it doesn't lose if it becomes overgrown. Often curls and will grow well over 1' long. A must-try.
Olympus Bell Pepper
Uniform bells, green in two months, red in three. Plants form in bushes, setting fruit just after one month. An ideal candidate for stuffed peppers, salsas, stews, and more.
Yellow Crookneck Squash
Summer staple, delicious yellow squash. Produces well on large plants.
Bush Beans - Provider
A wonderful producer, plentiful. Will produce throughout the Spring and Summer. Tasty for fresh eating right off the plant.
Butternut Squash
An excellent, highly flavorful squash. Yields 3-5 very large squash, takes 3-3.5 months to produce fruit.
Eggplant - Orient Express
More bountiful than our Italian variety. This Japanese eggplant is slower to start, and produces long, slender, purple fruit. A staple throughout the Spring and Summer.
Fall/Winter Vegetables
Cauliflower
Snow Crown Cauliflower grows best in cooler weather. It may produce one head or several small heads over several months; the leaves are also edible. They are hearty, similar to a collard green, and may be sauteed or even baked. Start in late summer to produce in fall.

Snow Pea - Oregon Giant
Quick start, peas begin shoeing in less than two months. Pea and pods are edible, the pod itself is slightly sweet. Wil naturally climb if given the opportunity.
De Cicco Broccoli
Larger than Spring Raab broccoli, smaller than Belstar broccoli. 45 days, fairly long harvest period. Will produce secondary heads. Leaves are also edible.
Brussels Sprouts - Gladius
Large plant, develops strong structure before forming the sprouts. Takes about 3 months to produce on strong stalks. Leaves can also be eaten.
Merlot - Chinese Cabbage
Similar to a napa cabbage, this upright head forms beautifully. Add a splash of color to your garden with this cool weather vegetable.
Tendersweet Cabbage
Traditional, sweet cabbage, takes around 3 months to reach maturity. Delicious, grows late summer through winter.
Minuet - Chinese Cabbage
Similar to a Napa cabbage, this is a fairly quick producer. Great for fall planting/winter planting. You can eat the outside leaves, as well, before the head forms.
Sugar Sprint Snap Pea
A wonderful treat, these peas prefer a shady spot in the summertime, and really thrive in the cool weather of fall/winter.
Edamame
Soybean, or edamame. This plant reaches about 2-3 feet tall. Does best in cooler weather, from 50 to mid-70s. Produces well.
Kohlrabi
Quick to grow, 1.5 months! Beautiful specimen. As the bulb grows, gently pull the plant slightly out of the tower so the bulb forms outside. This is similar to celery, fennel, and beets.
Kalette - Autumn Star
Only a few left!
One of our newest items for the fall/winter: Kalettes are a cross between Brussels sprouts and kale, forming open florets in place of traditional Brussels sprouts.
140 days to harvest from seed, quicker as a seedling. Plants can get several feet tall.
Spring Raab - Broccoli
This replaces our mini broccoli from last year. Maybe be grown most of the year, when temperatures range between the upper 40s through the mid 80s.
Great for its leaves and the small florets. Pick back to produce offshoot heads. If left unpicked, florets will begin to flower, and are still edible.
42 days to harvest, quicker as a seedling.
Kale
Toscano "Italian Heirloom" Kale
Italian heirloom kale, also known as lacinato, dinosaur, or blue kale. This is the second most tender kale we grow, only to Red Russian kale. Grows well year-round.
An excellent candidate for the microgreens sections of the Tower Garden. Leave 2-3" when harvesting and enjoy multiple cuttings.
Red Russian Kale
Widely-lobed leaves, which change from red to green as the plant matures. The red comes from the stalk. Ready for harvest in two weeks, will grow for months.
Excellent for microgreens, leave 2-3" when harvesting and watch it regrow.
Winterbor Kale
Typical highly-curled kale, tasty, perfect for the cool weather of the fall and winter. Like most kales, this will thrive for months at a time, simply pick the outside leaves and the stalks will continue to produce from the middle.
Dazzling Blue Kale
New Dino kale with purple midrib, contrasts well with the leaf. Similar to Toscano kale, with a distinct purple center.
Lettuce
Green Star Lettuce
A personal favorite! Sweet and flavorful, produces footlong leaves in a large, loose head. Leaves are wavy at the end, yet crisp throughout. Perfect for salad or lettuce wraps.
Red Romaine - Truchas
Small head, especially compared to green romaine. Reddish-purple tinged with light green. Excellent for salads, any dish with whole leaves, as they are easy to pick.
Crispino Iceberg
Crispino
Head will forms within 1-2 months. Best to cut entire head once formed. Crisp flavor, sweet, best in slightly cooler weather, though it can withstand the warmer temperatures of spring and early summer.
Salanova® Red Butter
Beautiful rosette of deeply red lettuce. Will continue to yield if picked from the outside. Soft texture, perfect to mix with a crunchy counterpart, such as romaine or green star.
Salanova® Green Butter
Tightly compact heads form a beautiful rosette. Leaves may be picked from the outside to prolong the life of the plant rather than harvest the entire head. Soft lettuce, delicious.
Allstar Lettuce Mix

Salanova® Red Sweet Crisp
Sweet flavor and crunchy, crisp, succulent leaves. Conventional seed with NOP-compliant pelleting.
Double red leaves with a very defined, three-dimensional shape. Sweet, almost romaine-like flavor, with a crisp, almost iceberg-like, texture. Large, heavy heads are slow to bolt.
Leafy Greens
Spinach - Space
Only a few left!
Excellent for trimming and regrowing. Better adapted to spring and summer heat, though afternoon shade will help to extend its lifespan. Grows well in cool weather. Excellent as baby spinach or full sized spinach.
Arugula
Intense, vibrant flavor which increases with each cutting. Quick growth habit, good for microgreens in a week, full size in 3-4.
Note: Cut back as long as you like the flavor, will become spicier each time.
Arugula will produce white flowers which may be added to many dishes. Spicy with slight sweetness.
Beet Greens - Early Wonder Tall Top
Fast growing, packed with flavor, grown for the leaves, though it will produce a relatively small beet, as well. Leaves will be available to harvest in three weeks and will produce for several months.
In a tower garden, it is best to place at the top to make removal easiest if the roots become too large. Simply remove the shower cap and the net pot can be dislodged.

Premium Greens Mix

Large leaves, tender when young, heartier after several months. Collard greens can survive many months, even under poor conditions. Pick consistently for a very high yielding crop. May be grown year round.

Herbs
Cilantro - Calypso
Excellent flavor and value, may be trimmed many times. Best in slightly cooler climates, will bolt more quickly in extreme heat. Seeds will form after the flowers and may be dried. Cilantro seeds are the spice coriander.
Common Sage
Common Sage
Dusty, green leaves are used in dressing, sauces, salted herbs, sausage, and tea. Make a good base for dried floral wreaths. Also known as garden sage. Perennial in Zones 4-8.
• Edible Flowers: Edible, lovely, small lavender flowers appear in early summer with a mild and sage-like flavor. Flower spikes can be battered and fried, cooked in rice, egg, or cheese dishes, or used to garnish salads and pizza.
Thyme
Excellent flavor, widely used seasoning. Decent growth rate compared with most herbs, which are typically slow.
Oregano
Only a few left!
Wonderful scent, makes a strong impact on any dish. May be used fresh or dried.
Dill
Strong flavor, perfect for adding to a meal or salad. Will reach upwards of 15". May be cut back multiple times. A classic.
Fennel
A colossal winner, this fennel grows quickly and will be around for months. The bulb may be picked from the outside, continuing to form from the middle. A natural licorice flavor, used for both frill and bulb.
Curly Parsley
Will grow up to 12" and may be cut back to regrow several times. Distinctly curled leaves, striking. An outstanding addition.
Flat Italian Parsley - Giant of Italy
Terrific flavor, a large plant with longevity. Best to trim and allow to regrow.
Fine Chives
Dolores
Once established, this plant may be cut and re-cut, it's a long lasting favorite, splendid as a diced addition to many a dish.
Garlic Chives

Chinese Leeks/Garlic Chives
Garlic flavor, similar in growth habit to chives, yet maintains a flat leaf. Excellent alternative to traditional chives.
Bunching Onion - White Spear
Quick, hardy onion, grown for its tops. Pick early and often. Larger than chives, with rich flavor. Bulbs are petite, with minimal rooting depth.
Edible Flowers
Nasturtium
Only a few left!
Incredibly versatile, vigorous plant, to be used for both edible flowers and leaves. Flower are vibrant, slightly sweet, with a definite kick. Leaves are spicy, perfect for mini wraps. Plant in a contained area, will spread otherwise.
Viola - Edible Flowers - Helen Mount
Helen Mount
Also known as Hearts-Ease. 1-2" tricolor flowers in purple, yellow, and white. May reseed. Also known as pansy, Johnny jump-up, and European field pansy. Perennial in Zones 4-9.
• Edible Flowers: Abundant blooms make dainty garnishes for salads and desserts with slight wintergreen flavor. While a popular choice for brightening up salad mix, the flowers are also good for candying.
Big Smile Dwarf Sunflower
Beautiful bloom, stays compact and is perfect for a container or Tower Garden.
Queen Sophia French Marigold
Edible leaves and flowers, great for companion planting.

Borage

Lemon Bee Balm - Lemon Mint

Lemon Bee Balm, or Lemon Mint
This is a native plant to the United States, with edible flowers and leaves. The leaves are strikingly spicy. This plant is great for attracting beneficial insects to the garden.
Mexican Mint Marigold (Mexican Tarragon)
Both leaves and flowers are sweet. May be used in salads and as a garnish. A natural licorice flavor, in line with chervil, fennel, and sweet thai basil. Quick growth, a popular choice to brighten a garden with function and beauty.
Microgreens
Greens picked specifically to do well in the microgreens section of the Tower Garden. Meant to be clipped back to 2-3 inches and regrow. Don't cut back too harshly because plants may not regrow. Wonderful to garnish dishes. My favorite greens for the microgreens are kales, mustards, and arugula.
